JOB DETAILS:

Responsibilities:

  • Prepare all sauces, gravies, and stocks for the kitchen.
  • Sauté meats, fish, and vegetables to order.
  • Create and maintain consistent quality and flavor for all signature sauces.
  • Coordinate closely with the Chef de Partie and other stations to ensure seamless service.
  • Taste and season all dishes prepared at the station accurately.
  • Manage inventory for the sauce station, including herbs, spices, and dairy.

Qualifications:

  • Formal culinary training is highly desirable.
  • Significant experience as a Commis or Demi Chef de Partie, specifically in sauce preparation.
  • In-depth knowledge of mother sauces, derivatives, and various cuisines.
  • Exceptional palate and attention to detail.
  • Ability to multitask and manage multiple orders during peak service.
